Vegan Chocolate Ball Dates Recipe

I have been making these Chocolate balls for treat time during my Bliss Out Yin Yoga & Yoga Nidra Experiences and quite a lot of my students have been asking me for the recipe so here it is!

Makes approx 13 balls.

Ingredients:

  • 12 mejool dates

  • 250g desiccated coconut

  • 200g ground almonds

  • 2 tablespoons almond butter

  • 100g flaked almonds

  • 2 bars of Green & Black's Dark Chocolate

Instructions:

  1. Begin by soaking the mejool dates in boiling water for about 10 minutes to soften them.

  2. After 10 minutes, drain the dates from the water, but be sure to save the water for later use.

  3. In a food processor (such as a Magimix), combine the soaked dates, desiccated coconut, ground almonds, and almond butter.

  4. Blend the mixture until it starts to come together. If the mixture appears too dry, slowly pour in some of the saved date water until the desired consistency is achieved. The mixture should be sticky enough to easily form into balls.

  5. Once the mixture is ready, use your hands to roll it into small balls and set them aside.

  6. In a dry frying pan, toast the flaked almonds over low heat until they are lightly golden and fragrant. Keep an eye on them to prevent burning.

  7. Next, melt the dark chocolate using a Bain marie or a heatproof bowl set over a pot of simmering water.

  8. Once the chocolate is fully melted, dip each ball into the chocolate to coat it entirely. You can use a spoon to help coat the balls evenly.

  9. After coating the balls in chocolate, place them on a parchment-lined baking sheet or tray.

  10. Sprinkle the toasted flaked almonds over the chocolate-covered balls before the chocolate sets completely, ensuring they stick to the surface.

  11. Once all the balls are coated and decorated, transfer the tray to the refrigerator to allow the chocolate to set completely. This should take about 30 minutes to an hour.

  12. Once the chocolate has hardened, transfer the vegan chocolate balls to an airtight container, such as a tupperware, and store them in the refrigerator until ready to serve.
